Recipe: Fluffy Moist Marble Cake

Ingredients
1.Butter – 120 g
2.Sugar – 100 g
3.Eggs – 3
4.Vanilla Essence – 1 tsp
5.Yogurt – ½ cup
6.All Purpose Flour – 1 ⅔ cup
7.Baking Powder – 1 ½ tsp
8.Baking Soda – ½ tsp
9.Salt – as per your requirements
10.Cocoa Powder – 1/8 cup
11.Coffee Powder – 1 tsp (diluted in 2 tbsp of hot water)

Ingredients For Ganache
1.Fresh Cream – 80 g
2.Dark Chocolate – 80 g

Method
1.In a bowl, whisk together sugar and eggs till pale and fluffy. Add in the melted butter into it and mix it well.
2.Add in the yogurt and vanilla essence and give it a mix.
3.Now sift the flour, salt, baking powder, baking soda, combine this powder mixture with the egg mixture and with a spatula, fold it. Be careful not to over-mix.
4.Separate the batter into half.
5.In a small bowl, mix the diluted coffee and cocoa powder. Then add in one half of the batter and mix it.
6.In a greased and lined loaf tin, alternate pouring the vanilla and chocolate batter in the tin. Creating a marble effect using a toothpick, gently swirl the batter together.
7.Bake in a preheated oven at 180 degrees celsius for 30-35 mins or until the inserted toothpick comes out clean. After it is done baking, let it cool.
Method For Ganache
1.Simmer dark chocolate and fresh cream for 5 mins then whisk and combine. Pour the ganache over the cooled cake and smooth it out.
